After you've spent all the time making mashed potatoes, don't you just hate to throw out the leftovers. Here's a simple way to use them.
Add an egg, onion, cheese and your favorite herbs to the potatoes. Stir them all together.
Using your clean hands, make rounds about the size of a hockey puck. Dip the potato 'puck' into some bread crumbs, then sauté them in a little olive oil or butter until browned. You have a wonderful side dish for tonight's dinner.
