I love meatballs and make them ahead of time so that I always have some homemade in the freezer. Meatballs cook best when they are all the same size, so I use my favorite size disher/scooper to keep them about the same size.
When I sauté my meatballs on the stovetop they tend to get lopsided and lose their round shape. One way to deal with this is to make your meatballs and place them in a mini muffin pan or a regular sized muffin pan, depending upon the size you want the meatballs. Then I put them in the oven until they are done. I usually bake them at about 350 degrees F until they are done. This varies on the size and type of meat you used in your meatball recipe.
While you will not get the brown crust on the meatball, you will get a healthier version of your favorite meatball since they are not made in oil. They will also bake evenly and stay round.
