I sure hate when a recipe calls for a tablespoon of tomato paste. After opening the can and knowing that I will use it for some other recipe, it always seems to go to waste. Sometimes I'll freeze it in little dollops, but I always seem to lose the stuff in my freezer.
Rather than opening up an entire can for just a little bit, why not purchase a tube of tomato paste. That way you can use what you need and the rest stays fresh until you need it again.
It used to be difficult to find, but in recent years, it's available in many grocery stores. I've even found it at Wal-Mart and Cost Plus World Market.
I do like to keep my opened tube in the fridge so it stays fresh.
If you have not purchased tomato paste in a tube, put it on your shopping list and try it.
