If you have a recipe that calls for stale bread, it will taste much better if you take fresh bread, cut it into cubes and dry it in an oven until it's dry.
Okay, it's dried bread...not stale, but it works the same way in your recipe and will retain its fresh taste.
You can also put the dried bread in the freezer so you have it ready next time you need 'stale' bread. Just don't keep it in the freezer too long or it will taste stale.
