Today's Kitchen Tip: What's the difference between light and dark brown sugar

Have you ever wondered what the difference is for light and dark brown sugar?  What makes brown sugar brown is the addition of molasses to granulated sugar.  Light brown sugar has less molasses than dark brown sugar.

Are they interchangeable?  Maybe.  If your recipe calls for light brown sugar, the recipe may need less of a molasses flavor; if it calls for dark, it may need more.

If I am making a recipe with very strong flavors and the recipe calls for dark brown sugar, I probably will try to use dark brown sugar.  Otherwise the molasses flavor might get lost.  If my recipe calls for light brown sugar and the recipe flavor is real mild, dark brown sugar may overpower the recipe. 

For me, 99% of the time, I will interchange them.
