If you have ever taken a cooking class from me you know that I love silicone liners. I have used them for baking for years.
However, I love them even more when making candies. My favorite candy to make is turtles. But if I make them on waxed or parchment paper, they stick and I have an awful mess.
To alleviate this problem, I line my pan with silicone sheet liners (I use Silpat). The stick candy doesn't stick to these sheets and keep my candy in the correct shape without pulling the caramel.
I use these for any candy that can stick. They will save a lot of time and effort. They also eliminate little bits of foil or paper that always seem to end up in the candy itself.
Do not fear, I still use them for baking as shown by my tray of scones. The blueberries that oozed out of these do not stick to the silicone and make for easy clean-up, too.
I love my Silpat.
