I know so many people who do not eat 'leftovers'. However, it is really easy to transform yesterday's dinner into something new and wonderful.
For example, we had flank steak the other day for dinner. We served it with potatoes and veggies and it was delicious. We made one larger than we needed for dinner and placed the remainder in the fridge.
A few days later, we sliced the beef and placed it on lettuce with artichokes, kalamata olives and feta cheese. It was difficult to tell that our meal was actually 'leftover'.
Just use your imagination and your leftovers will be new again.
