Today's Kitchen Tip: Roasted chicken

I like to buy a ready-roasted chicken from places like Costco.  Unless chicken is on a big sale, it's usually cheaper than purchasing a chicken and roasting it. 

So what if you do not want roasted chicken for dinner?  No problem.  Use the chicken to make enchiladas, quick chicken soup, chicken salad...the uses are endless.

If you do not need all the chicken you buy...no problem.  Cut it into pieces, place in a zip-top bag or freezer container, and place it in the freezer.  You will have chicken available when you need it.
