Today's Kitchen Tip: How to freeze cookies


II love to make cookies for the holidays.  They make the perfect gift for friends and family.  Some people take a weekend or longer and do nothing but bake.  I don't have the time to do that so I like to bake a little at a time.

To do that, I end up freezing my cookies until I am ready to hand them out.  Most cookies freeze well, but I have found that chocolate cookies (not things like chocolate chips) do not freeze well, so I bake them last.

To freeze cookies, place cooled cookies on separate layers of waxed paper. The paper protects the cookies from crumbling and provides insulation against freezer burn.  Sometimes I'll put them in Ziploc bags, but usually I will put them in canisters so they do not crush or break.  Old coffee cans work great.  So do the cans that you get when you buy holiday cookies.  Also, craft stores tend to sell canisters.  They are perfect too.   Wait till they go on sale or even buy them the day after Christmas so you will get them at a very reasonable price.

Usually cookies will be okay in the freezer for 3 months...maybe more.  But truth be told, I have lost bags in the back of my freezer and found them a year later.  Believe it or not, every single cookie was still delicious.

So start your holiday baking now so you can get all your holiday tasks done without feeling exhausted.
