Pulled pork magic

I love pulled pork but it can be a pain to 'pull' it.  I recently tried a shortcut that seemed to work quite well.

Cook your pork as you usually do, but make sure it is really cooked well and is very tender or this method will not work. 

Cut the pork into chunks and put it into your Kitchen Aid stand mixer.  Yes, I did say MIXER.  Turn the mixer on to about speed 2 or 3 and watch the magic happen.  Believe it or not, the mixer will 'pull' the pork for you.  If you have a few chunks that did not 'pull', just hand pull them.  It will be so much quicker to shred the pork and will save you lots of time.

Today's Kitchen Tip: What can I do with my leftover ham

Many of us have ham for the holidays.  We love ham, but they are usually much larger than our family can eat.  Like turkey at Thanksgiving, I can only eat it for so many days before I say 'enough already!).

While I like to enjoy a meal or two exactly as we ate it on the holiday, there are so many other things to do with that ham to make it different. 

Sure, we can make au gratin potatoes with ham.  We love that.  But why not try something a little different.  A few of my favorites are ham and asparagus frittata and ham and asparagus pizza.  Obviously we have asparagus around for these dishes, but there are great with other veggies, too.

While I do not like the texture of ham that has been frozen, we do freeze just a little so we can make ham and eggs during the year.

So do not fret with all that ham you have left.  Use your imagination to turn it into something awesome.

Today's Kitchen Tip: Cook once and eat twice - transforming leftover pork tenderloin

We love to cook once and eat twice, but aren't a huge fan of eating the same thing every day.  We did not want to eat 'leftovers', so I did my magic and transformed my previously-cooked, Mexican-seasoned pork tenderloin into something completely different.

For today's tip, we want you to grill (or cook however you like it) additional pork tenderloin or chops when you are going to have it for dinner.  Then....

Look through your refrigerator to see what you have that will complement your pre-cooked pork so you can have a completely different meal.  This time I used a pork tenderloin, apples, Trader Joe's honey apple butter (yum) and whipped up a fabulous meal. 

Check out our honey apple pork tenderloin recipe.  It only took about 15 minutes from start to finish and was deeelish!!
