Turkey Alfredo pizza recipe is a unique way to use leftover turkey

It's getting to the time where we need to use up our leftover turkey. If you can't look at one more turkey sandwich, we have an idea for you. How about a pizza featuring turkey.

 Our pizza has lots of great ingredients that are probably around your kitchen already anyway. This recipe uses caramelized onions. If you do not have any, just skip them, but do use them if you have them. We like to keep some in our freezer just for times like this.

If you have leftover cranberry sauce that uses whole cranberries, this might be good sprinkled on top of the pizza after it's baked.  So yummy.  Actually, you can play around with this recipe to come up with ways to use your favorite leftover Thanksgiving items to make the perfect pizza for your family.

Turkey Alfredo Pizza
Serves 1-2
1 8” Boboli crust
5 tsp edo sauce
1 tbsp Caramelized onion
¼ cup Turkey, diced
1 tsp Bacon, optional
2 tbsp Grated parmesan cheese
2-3 tbsp Grated mozzarella cheese
Arugula, optional

  1. Preheat oven to 450°.
  2. Place crust on a baking sheet.
  3. Lightly spread alfredo sauce over entire crust. Sprinkle caramelized onion over sauce, then turkey and bacon. Sprinkle parmesan then mozzarella over pizza. Bake for 8-10 minutes or until the cheese is bubbly.
  4. Sprinkle arugula lightly on top of the pizza, if using. Serve.

Great recipe to use leftover pumpkin pie

Thanksgiving is over and all that's left is the leftovers. If you have ever had leftover pumpkin pie, it's difficult to think of it as anything but a leftover, but we have come up with a recipe that will transform leftover pumpkin pie into a delicious parfait.

This recipe is very easy to make, delicious, and you will forget that you are eating leftovers.

We had some stemless wine glasses that we used to serve these.  It was so pretty and totally  made a statement.

If you do not have any leftover pumpkin pie, this is good enough to bake a crustless pie just so you can make it.

Pumpkin Pie Parfait
Serves 4
• 1 cup Baked pumpkin pie with crust removed
• 4 oz Softened cream cheese
• Dash Cinnamon
• 4 serving size Vanilla instant pudding
• 1 ⅓ cup Milk
• ½ cup Cool whip or used whipped cream
• 4 slices Pound cake
• 2 tbsp Bourbon or rum, optional
  1. In a medium sized bowl, mix pumpkin pie filling until it’s smooth. Stir in softened cream cheese until well blended. Add cinnamon to taste. The amount needed will depend upon the flavor of the pie filling.
  1. In another bowl, mix together vanilla pudding and milk until thick. Fold in Cool whip.
  1. Brush pound cake lightly with bourbon or rum. Dice the pound cake into ½” pieces.
  1. In a parfait dish layer pound cake, then cream cheese/pumpkin mixture, then pudding. Top with another layer of pound cake. Repeat. Put a dollop of cool whip on the top. Refrigerate until ready to serve.

Today's Kitchen Tip: What can I do with my leftover ham

Many of us have ham for the holidays.  We love ham, but they are usually much larger than our family can eat.  Like turkey at Thanksgiving, I can only eat it for so many days before I say 'enough already!).

While I like to enjoy a meal or two exactly as we ate it on the holiday, there are so many other things to do with that ham to make it different. 

Sure, we can make au gratin potatoes with ham.  We love that.  But why not try something a little different.  A few of my favorites are ham and asparagus frittata and ham and asparagus pizza.  Obviously we have asparagus around for these dishes, but there are great with other veggies, too.

While I do not like the texture of ham that has been frozen, we do freeze just a little so we can make ham and eggs during the year.

So do not fret with all that ham you have left.  Use your imagination to turn it into something awesome.

Today's Kitchen Tip: Cook once and eat twice - transforming leftover pork tenderloin

We love to cook once and eat twice, but aren't a huge fan of eating the same thing every day.  We did not want to eat 'leftovers', so I did my magic and transformed my previously-cooked, Mexican-seasoned pork tenderloin into something completely different.

For today's tip, we want you to grill (or cook however you like it) additional pork tenderloin or chops when you are going to have it for dinner.  Then....

Look through your refrigerator to see what you have that will complement your pre-cooked pork so you can have a completely different meal.  This time I used a pork tenderloin, apples, Trader Joe's honey apple butter (yum) and whipped up a fabulous meal.

Today's Kitchen Tip: Roasted chicken

I like to buy a ready-roasted chicken from places like Costco.  Unless chicken is on a big sale, it's usually cheaper than purchasing a chicken and roasting it. 

So what if you do not want roasted chicken for dinner?  No problem.  Use the chicken to make enchiladas, quick chicken soup, chicken salad...the uses are endless.

If you do not need all the chicken you buy...no problem.  Cut it into pieces, place in a zip-top bag or freezer container, and place it in the freezer.  You will have chicken available when you need it.

Today's Kitchen Tip: Cook once and eat twice

I know so many people who do not eat 'leftovers'.  However, it is really easy to transform yesterday's dinner into something new and wonderful.

For example, we had flank steak the other day for dinner.  We served it with potatoes and veggies and it was delicious.  We made one larger than we needed for dinner and placed the remainder in the fridge. 

A few days later, we sliced the beef and placed it on lettuce with artichokes, kalamata olives and feta cheese.  It was difficult to tell that our meal was actually 'leftover'. 

Just use your imagination and your leftovers will be new again.

What can I do with leftover mashed potatoes?

After you've spent all the time making mashed potatoes, don't you just hate to throw out the leftovers.  Here's a simple way to use them. 

Add an egg, onion, cheese and your favorite herbs to the potatoes.  Stir them all together. 

Using your clean hands, make rounds about the size of a  hockey puck.  Dip the potato 'puck' into some bread crumbs, then sauté them in a little olive oil or butter until browned.  You have a wonderful side dish for tonight's dinner.
