If your recipe calls for freshly grated ginger, peel it (see instructions for how to do this), then use a microplane grater to grate it. It works very well and makes this task very simple. It works well because you get very small, almost paste-like pieces of ginger. There's no biting into a spicy hunk of ginger this way.
This also works well for grating garlic.
