If you are trying to watch calories and fat, one way is to use egg substitute products. While they will cut down calories quite a bit, you may find that they do not have as much flavor or richness as using a whole egg.
What we like to do is substitute one egg for 1/4 cup of egg substitute products to increase the richness and flavor. This works well for up to about 4 eggs worth of substitute eggs.
